  • Mix the garlic, thyme, basil and tarragon with the olive oil; divide into 4. Gently lift the skin of the chicken up without completely removing it. Spread the herb mixture under skin and pat down.
  • Beat egg with splash of water, dip chicken into egg then Panko bread crumbs, coating well.
  • Heat vegetable oil in pan. When hot, add chicken skin side down first. Fry till golden and crispy and cooked through.

Notes

You can prepare the chicken in the morning and let sit in the fridge till ready to coat and fry.
