  • Brown chicken in the oil until almost cooked, add the onion and sweet potato and sauté for 5 minutes.
  • Add the curry paste and coat the ingredients. Stir in the chicken broth and water. Bring to a boil, and then simmer for 7 minutes.
  • Add the cauliflower and cook until tender. Add the coconut milk and season with salt and pepper. Simmer for 2 minutes. Serve hot with warm Naan bread.

Notes

This soup is a family favourite at my house. Leftovers can be frozen or stored in the fridge.
