  • Preheat oven to 425°F. In a large skillet over medium heat, saute the mushrooms and shallot in butter or margarine until softened and cooked down a bit.
  • Add beef broth and parsley and saute 5-10 min. Add bread crumbs and stir. Spoon the mixture onto the tops of the steaks.
  • Wrap each mushroom topped tenderloin with a square of puff pastry. Place seam side down on a baking sheet.
  • Bake for 25-30 minutes until pastry is golden. Allow to sit at room temp for 5 min.

Notes

If mixture is too liquidy a few more bread crumbs will thicken things up quickly!! You can also substitute the beef broth with a 1/2 cup dry red wine if you prefer.
