  • Heat oven to 350 degrees F.
  • In small bowl combine flours, salt, baking powder and baking soda. Set aside.
  • In large bowl, beat eggs and sugar until light and fluffy. Mix in mashed banana, apple sauce, vanilla and cinnamon.
  • Combine flour mixture with wet mixture in 3 separate additions.
  • Spoon batter into 2 lightly oiled 9 x 4 loaf pans.
  • Bake for 45 - 50 minutes. Test with toothpick. It may require 5 - 10 minutes more baking time depending on the oven.

Notes

If you use Splenda the bread will be denser. Increase or decrease cinnamon depending on taste.
