  • Cream butter and sugar until smooth and creamy, beat in egg and vanilla.
  • Sift together 2 cups flour, baking soda and salt. Add to creamed mixture with buttermilk, making 3 dry & 2 liquid additions. Toss rhubarb with 1 Tbsp. flour and mix gently into batter.
  • Cook in greased 13x9" pan at 350°F for 45 min.

Notes

Rhubarb can be substituted with other fruit – i.e.: applies, fresh peaches, blueberries, etc.
