  • In large skillet cook ground beef. When the beef is almost cooked and you have drained off any excess fat, add the shredded zucchini (if using) and cook until beef is browned. Meanwhile, cook macaroni until al dente - approx. 6 min (the pasta will continue to cook in the sauce so make sure it is still slightly firm).
  • In a large, microwave-safe casserole dish, mix tomatoes, soup and seasoning. Add beef and zucchini mixture and cooked pasta. Cover and microwave for 8-10 min. Remove from microwave, stir and cover evenly with cheeses. Broil in oven until cheeses are melted and turning golden brown.
  • Alternatively, cook in 350°F oven for approx. 25 min. (until edges are bubbling), remove from oven, cover evenly with cheeses and broil until melted and golden brown.
