  • Preheat oven to 350 degrees F and spray an 11x13 cake pan with Pam Cooking Spray. Combine oil, eggs, sugar, grated orange rind, and grated carrot. Mix well. Add remaining dry ingredients; while this is mixing slowly add the mandarin orange segments (including the syrup) and continue beating for 2 - 3 minutes.
  • Pour into pan and bake for 45 - 50 minutes. Cool completely, then frost.
  • Frosting:
  • Combine all ingredients and mix well. Frost cake.

Notes

This cake is a family favorite! I've even added a few drops of orange food coloring to the icing at Halloween time. Make sure to use the 11x13 pan as it makes a very large cake.
