  • Moisten roast with water and rub evenly with unseasoned meat tenderizer. With fork, pierce roast all over. Place roast on rack in baking dish; shield ends of roast with 2 inch strips of smooth foil. Cook, covered loosely with waxed paper in 600 watt microwave on Medium for 25 minutes.
  • Mix together then grind dried thyme, dried basil, dried bread crumbs, 3/4 tsp. cracked black pepper, and minced garlic clove. In a small bowl, after grinding above, mix with mayonnaise.
  • Remove roast, remove waxed paper and foil, and turn roast over. Spread mayonnaise mixture evenly over roast. Along top of roast, insert 3 toothpicks evenly spaced, about 1 inch deep. Cover roast with waxed paper, tenting paper over toothpicks. Cook on Medium 7 minutes, or until a thermometer inserted in the centre of roast reaches 120 F for medium rare.
  • On a heat safe surface let roast stand covered 5 to 8 minutes. Temperature will reach 135°F. Cut roast across in thin slices. Arrange on a warmed serving platter, garnish with radish and basil leaves. Skim fat and serve Au Juice.


This of course would be served with Yorkshire Pudding etc. but its advantage is that you have the regular oven free to make the pudding.
