  • Cake
  • Preheat oven to 350°F. Grease & flour bundt or tube pan. Beat eggs until very frothy. Gradually add sugar & oil beating until light. Sift flour, baking powder, baking soda, spices & salt. Add to egg mixture & mix well. Combine carrots, pineapple, vanilla and walnuts. Add to batter and mix thoroughly.
  • Pour into pan and bake 50 to 60 min or until toothpick comes clean. Invert on rack and cool.
  • Icing
  • Beat cream cheese and butter until smooth. Gradually add icing sugar, lemon juice, vanilla & lemon rind beating until smooth. Spread on top of cake.

Notes

Tip: Well wrapped this cake keeps moist several days on the counter. This cake also freezes well.
