  • Peel the peaches and nectarines, cut up in chucks, cook with enough water to cover cut up fruit. Once cooked, mash the fruit and put aside; should yield about 5 cups.
  • Zest the orange and lemon, put zest aside. Peel the remaining peeling off of the orange and lemon and section the fruit over the pot not to lose any juice. Add enough water in pot to cover fruit pieces. Add peeling in pot with sectioned fruit. Cook until tender. Remove peelings. Strain through collider to remover seeds keeping as much pulp as possible in recipe.
  • Place in pot, zest, cooked peaches and nectarines, orange and lemon comfiture. This should be about 6 cups. Add 3 to 3.5 cups of sugar. Bring to boil and simmer for 5 minutes. Bring to hard boil, add pectin with 1/4 cup of sugar, boil for one minute. Remove from heat. Stir and skim for 7 minutes. Pour into warm prepared mason jars.

I just happened to make up this recipe because I had some fruit in the house that I did not want them to go to waste. I enjoy cooking so I took a chance. Everyone who tasted it loves it. Try it you might like it.
