  • In a big bowl mix together the first 5 dry ingredients. In a mixing bowl mix together brown sugar, oil and vanilla. In a glass mix together the water and baking soda. Add the baking soda water to the brown sugar oil mixture. Stir. When combined it will look like a brown syrup. Add dry ingredients to brown syrup.
  • Using a cookie scoop of your size choice scoop on to baking sheet.
  • Bake at 350°F for 12-15 minutes or until brown. Enjoy.

Notes

This is my easiest cookie recipe. I use a half cup measuring scoop to measure all my ingredients, only 2 bowls and a one cup measuring glass to measure the water. This eliminates too many utensils and makes for easy clean up. I have done numerous variations of this recipe by using: 1/2 cup raisins and 1/2 cup coconut OR 1/2 cup chocolate chips and 1/2 cup coconut Instead of the Craisins and white chocolate chips. I like the Craisins and white chocolate chips for the Holidays. My nephews love the chocolate chip / coconut recipe the best while the rest of the family love the oatmeal raisin combination.
