  • Cut pork tenderloin into 1 inch slices. Using meat hammer, tenderizer, or side of a saucer, beat each piece till twice its size. Beat cream and egg together with a fork, set aside. Now add and mix seasonings to the crushed crackers.
  • Heat 2-3 Tbsp. of the oil in small frying pan. Dip the flattened, tenderized loin pieces, in the cream-egg mixture then roll them in the seasoned crackers. Fry each piece just till browned on both sides (do not fry till done only till browned). Add more oil for each piece as needed. Remove and place each browned loin piece in shallow cake pan or casserole dish.
  • Bake in preheated 350 degrees F oven for 25-30 minutes. Remove from oven top each piece with the crushed drained stewed tomatoes then Kraft Shredded Mozzarella Cheese. Return to the oven and bake another 5-8 minutes till cheese melts.

Notes

These are so tender and delicious and the kids just love them. Substitutes: Plain saltine crackers can replace the Christie Swiss Crackers. For a real Italian twist use Kraft Italian Blend Shredded Cheese in place of the Kraft Shredded Mozzarella.
