  • 1. Bring a large pot of lightly salted water to a boil.
  • 2. In a large skillet, melt the butter, add shallots, garlic and saute briefly over medium heat. When the garlic is golden, add tomatoes, salt, pepper and cayenne and let simmer until most of the liquid evaporates. Add vodka, cook for 10 minutes, then add cream and nutmeg, stir in the parmesan and simmer for about 2 minutes or until the sauce begins to thicken. Remove from heat and set aside.
  • 3. When the water is boiling, cook pasta and drain well. Return saucepan to stove, add pasta to skillet, toss well and serve with parsley and cheese.
