  • Add water to pineapple syrup to make 1 1/2 cups. Heat to boil. Add Lemon Jell-O Mix, stir until dissolved. Add sugar, salt and lemon juice. Chill slightly.
  • Add pineapple and carrots. Whip 1/2 pint cream until stiff. Fold into mixture.
  • Pour into mold. Place into fridge overnight.
