  • 1. Make pudding using pineapple juice INSTEAD of milk. Add the crushed pineapple. Add coarsely crushed crackers and mix.
  • 2. Refrigerate overnight allowing the crackers to absorb much of the pineapple juice. Note that it WILL NOT harden as much as this pudding typically does when milk is used.
  • 3. Serve with Cool-whip topping "marbling" the Cool-whip with the pineapple/pudding mix.

Notes

This is very healthy, tasty and very, very low fat and low in calories. Yet it is sweet from the pineapple & juice. I have numerous variations of these types of desserts in LOW CALORIE/LOW FAT versions.
