I know that you think this sounds like a crazy salad but believe me it's been an absolute hit every time I've made it ... NEVER any leftovers!
A few things to note:
1 - Used the "light" Mayo and Miracle whip and it seem pretty good.
2 - Make sure there are no unpopped corn kernels. Tough on the teeth. I've also bought the pre-popped white cheddar flavor popcorn and it is really good also.
3 - We like Kraft "Old" Cheddar because it's got such flavor but I'm sure any cheddar would be tasty.
4 - Whenever I make this I wrap the 'chopped' ingredients separately in plastic wrap (so the flavors stay fresh) and then just before serving I toss everything together... the salad will "shrink"
5 - It will not look like popcorn after all is tossed.... that's why I also include a funky little card on a stick and put into the salad.
6 - The salad is full of flavor and color. It's a fun addition (and conversation piece) at every summer BBQ!!
