  • Put pumpkin pieces into stock and start to heat.
  • Peel and core apples, cut into cubes. Peel and grate potatoes. Put the apple and potatoes into pan with pumpkin and stock. Bring to boil and simmer for around 15 to 20 mins.
  • Pulse with electric mixer to make into smooth soup. Flavour with pepper to taste and curry powder. Very good on a cold day.

Notes

Good thing for those don't know what to do with pumpkins after Halloween. The soup can be frozen to be used later in the winter.
