  • Wash & cut rhubarb. Add a small amount of water to rhubarb to stew. Strain in cheese cloth, 2 to 3 hours to extract 3 1/2 cups of juice.
  • Stir sugar in juice & bring to a boil, stirring constantly. Add Certo and return to a boil for 1 minute.
  • Remove from heat and skim froth from the top.
  • Pour in jars and seal.

Notes

When you put your juice in the cheese cloth, or jelly bag, let it drip into a bowl. If you squeeze the bag, you will get cloudy jelly. I fasten mine onto a bowl or a big pot with clothes pins I keep for this purpose only. The jelly is a little tart, but, really good.
