  • Bake the salmon in its own juices according to the package instructions. When the fish breaks apart easily, place in a large mixing bowl including any juices and mash.
  • Add all the other ingredients and mix thoroughly. Place in a 1.5L parchment lined loaf pan.
  • Bake in a preheated oven at 350°F (180°C) for 45 to 50 minutes or until the centre is firm and the top is firm.

Notes

When I was a small boy, one of the meals I always looked forward to was my Mother's Salmon Loaf. It was delicious. I don't have my Mother's recipe (I don't think she ever wrote it down and I think this one is a lot lighter than hers) but this one is really good.
