  • Preheat oven to 450°F (230°C). Combine flour, sugar, baking powder and salt. Cut in the butter or margarine until mixture resembles coarse meal. Combine egg yolk, whole egg and milk. Add to flour mixture along with cereal and raisins, if using. Turn out on a lightly floured board and knead until smooth.
  • Divide into four parts. Pat each part into a circle, and with a floured knife, cut each circle into quarters. Place on ungreased baking sheet and brush each top with beaten egg white. Sprinkle with cinnamon sugar, if using.
  • Bake 10 minutes or until lightly browned.

Notes

If you want a savoury scone, do not add fruit and replace cinnamon sugar with dried Parmesan cheese.
