  • First of all dissolve cubes in 2 cups of boiling water. Pour into soup pot. Add red lentils simmer. Let this simmer and add more water as it thickens.
  • Add your vegetables and more water so by the time everything is in the pot it should be just about full and fairly thick.
  • Let simmer for a couple of hours and add salt to taste.

Notes

This soup can be whatever thickness you like by the amount of water used. Lentils contain high levels of protein and are one of the best vegetable sources of iron. They also contain dietary fibre.
