  • Preheat oil in deep fryer to 475°F. Mix all the dry ingredients together in a medium sized bowl. Set aside. Peel yams & cut into strips, about 3" long & 1/4" wide. Rinse thoroughly in cold water; allow to drain well.
  • Place yams in a large Ziploc bag. Add 2 Tbsp. olive oil to bag. Seal & mix well to coat yams with oil. Open bag & add spice mixture; reseal bag & shake to coat.
  • Deep fry in small batches of about 2 cups, until golden brown (about 7 minutes). Drain on paper towel. Serve hot with a generous dollop of Kraft Real Mayonnaise on the side for dipping (original OR flavored).


I searched and searched the internet for a good seasoned yam fries recipe & couldn't find one that I was happy with. A common problem seemed to be that the fries wouldn't crisp enough. I created this recipe to compensate for that. These turn out lightly crisped & seasoned on the outside, sweet & tender on the inside. The thinner the chip the crispier it is. You can increase the cayenne pepper for more heat if desired. My family uses Kraft Real Mayonnaise on the side for dipping. The flavored Kraft Mayonnaises would work well too. I've never submitted a recipe before, so I hope you'll love this as much as my family & I do. Cheers! Mary-Ann
