  • On a large baking sheet, place the 1 tortilla so half of it hangs outside the baking sheet. Place other 3 as such.
  • Sprinkle each half equally with Tex Mex cheese. Place, in a layer, baby spinach leaves on top of cheese. Cover spinach with cooked and diced chicken. Drizzle with BBQ sauce - put as much or as little as you wish. Add equal parts of peppers, of each color. Lay out red onions on top of peppers, equally. Top off with Kraft Italiano 4 cheese mix. Fold the hangover parts of the tortillas onto the cheese. Press.
  • Cook at 350°F for 30 minutes.


For a more traditional Mexican taste, substitute BBQ sauce for salsa. Can be made ahead, until cooking. Keep in refrigerator for up to two hours. Cover. Feel free to add your favorite vegetable!
