  • Combine flour and salt in a mixing bowl. Cut shortening into flour with a pastry blender or two knives. Do not over-mix; these are sufficiently blended when particles are the size of peas. Reserve 1 cup of this mixture. Add water gradually, tossing lightly with fork until all particles of flour have been dampened and pastry holds together when pressed between your fingers. Roll dough into round ball (handling as little as possible). Roll out on a lightly floured board until 1/8" thick and 1" larger than the diameter of the pie plate. Line plate.
  • Fill pie plate 3/4 fill with peaches. Mix pastry flour and sour cream. Pour sour cream mixture over peaches. Blend the dry pastry mixture and brown sugar. Sprinkle over filling.
  • Bake 15 minutes at 375 degrees F. Reduce heat to 350 for 25 to 30 minutes. Let cool slightly, and serve.
