  • Place half of the rice and beans in each of two bowls. Microwave on high for thirty seconds.
  • Top each serving with one cup of salad greens, one tablespoon of dressing and two tablespoons of cheese.
  • Serve immediately, while the rice is still warm and the lettuce still cool.

Notes

This salad is an instant meal and a great way to use leftover rice. Increase the nutritional value by adding leftover cooked vegetables, such as peas or corn, to the rice before heating.
