  • Preheat oven to 425°F. In a medium bowl, whisk the milk, cottage cheese, parmesan, eggs, egg whites, salt and pepper.
  • Place the pie plate on a jelly-roll pan; spread the spinach over the pie crust then pour the filling over the spinach.
  • Bake 15 min; reduce the oven temp to 350°F and bake until the filling is set, 20 min longer. Let cool 10 min before serving.

Notes

*Prefer fresh: 8 cups of wash trimmed spinach leaves Cook in saucepan with only water the water that clings to the leaves, stir as needed until wilted about 2 mins. Drain well and finely chop.
