This is a very simple, fast, easy-to-make shortbread recipe that I have been using for many years, and every time I make these, they are over really fast. It doesn't take too long to make and I promise you they taste delicious!
Instead of cookies, you can also make shortbread bars -- just press the dough evenly into a greased rectangular baking pan. Refrigerate for at least 1 hour before baking.
NOTE (1): the general rule of thumb is to use 1 part butter, half part sugar, and 2 parts flour. Adjust vanilla and salt accordingly.
NOTE (2): You can make different kinds of shortbread by adding chopped walnuts, almonds, chocolate chips, lemon zest, lavender extract, chocolate pieces in the centre, anything you like! just improvise! I usually add 1/2 cup at the very end of Step 1 (once the basic dough is made).
