  • 1. Clean the potatoes and cut into edible one/two-bite sizes. Pre-boil the potatoes in slightly salted water until soft (can take roughly 10-15 minutes).
  • 2. Drain the potatoes and transfer to a pre-heated pan with butter (or margarine). The pan needs to be hot enough so that the potatoes will sear rather than soak in the butter.
  • 3. When the potatoes are nearly done searing, coat lightly with the Greek with Feta dressing so as not to overpower the potatoes. Add the other ingredients at this time as well. Be generous with the parmesan cheese, it balances out the flavours, especially if you are using the heat spice.

Kraft's Greek with Feta dressing is the BEST. I've tried with other Greek dressings, but it just does not work. Calorie-wise can also be used, but keep in mind, it is a little more runny so it sits more in the bottom of your pan rather than on your potatoes. This is the side I normally pair with my pan-seared salmon fillets that I cook with butter and lemon juice in a pan and coat with salt, pepper and creole spice to taste. Fresh corn also works well with this dish.
