  • Break turkey frame or cut in half with kitchen shears. Place in large stock pot or Dutch oven with water, onion & salt. Bring to a boil, reduce heat, cover & simmer 1.5 hrs.
  • Remove turkey frame, when cool enough to work with cut off turkey and coarsely chopped. Discard bones, strain broth & discard solids. Return broth to pot, stir in cut up turkey, undrained tomatoes, bouillon granules, oregano, thyme & pepper. Stir in fresh vegetables. Bring to a boil, reduce heat, cover simmer for 45 min.
  • Stir in uncooked noodles, simmer uncovered for 8 -10 min or till noodles are done. Season to taste with salt & pepper.

Notes

We add cut up turkey if there is not a lot on frame. This can be a meal all by itself, serve with fresh bread.
