  • Preheat oven to 350°F. In pan add 1 package of coconut. Bake for 7 minutes until coconut is half brown and half white.
  • In medium bowl add sugar, brown sugar, all spice, baking powder and flour. In large bowl add 4 egg yokes, melted butter, vanilla and milk. Beat egg whites together until there are hard peaks then beat in 1 Tbsp. of sugar. Set egg whites aside. Slowly add dry ingredients to wet ingredients stirring constantly after all incorporated fold in egg whites.
  • Bake for 45 minutes until golden brown in a 350°F oven. Let cool for 20 minutes. While cake is cooling make package of pudding then let chill. Cut cake in half and add pudding in the center. Prepare icing (mix 4 Tbsp. of butter, 2 Tbsp. of water and 1-2 cups of icing sugar), then spread over cake and add toasted coconut on top.
