  • Preheat oven to 350°F. Line 12 muffin tins with paper liners. In a small bowl, whisk flour with baking powder and salt. In a large bowl, whisk butter with oil and sugar until combined. Whisk in egg and vanilla. Stir in half of the flour mixture. Gradually stir in milk and remaining flour mixture just until combined.
  • Spoon into paper liners, about 2/3 full. Bake cupcakes in centre of oven until toothpick inserted in centre comes out clean, about 20 min. Remove cupcakes to a rack and let cool.
  • Icing
  • Bring 1 1/2 inches of water to boil in the base of a double boiler. Place sugar, corn syrup, salt, water and egg white in the top of a double boiler. Set bowl on top of boiling water and reduce heat to barely simmering. Beat on high heat for 6 minutes until stiff peaks form. Remove from heat. Beat in vanilla for about 30 seconds until fluffy.
  • Immediately place 2 Tbsp. icing in center of cupcakes, leaving some of the cupcake showing. Swirl icing upright on cupcakes. Repeat with remaining cupcakes. These cupcakes are best served within a day.

Notes

~Tip~ For easier pouring, scrap batter in a large measuring cup before filling liners.
