Of course you can change this up lots of ways. Use whatever you prefer for the binder (some like mayo or buttermilk), some people do the double dip.
I use my food processor to chop up the Triscuit Crackers. Letting them sit for a few minutes after they're battered helps the crackers stay on better when frying. You'll lose a little batter in the frying pan, but there's more than enough left on the cutlets.
These are good as leftovers too. Heat them on a pan or in the oven, but microwave works too.
Experimentation led to this recipe. Try different flavors of Triscuit Crackers or with chicken cutlets or strips. Look around your kitchen for ideas, anything is possible, you just have to try it!! Cooking time varies of course, that should go without saying.
