  • Chop zucchini into 1/2" cubes. Chop onion & tomato.
  • Saute vegetables in oil. Add seasonings to taste.
  • When zucchini is tender, stir in bread crumbs, and serve. Keeps in the fridge for several days if cooking for one.

Notes

Even one zucchini plant yields more than can be used in muffins or loaves. Quantity depends on size of zucchini. Seasonings I have tried are salt & pepper, garlic salt, basil, parsley.
