  • Preheat oven to 300°F. In small bowl, whisk flour with cocoa powder and salt. Using an electric mixer, beat butter with 1/2 cup sugar until creamy. On low speed, beat in flour mixture just until combined, scraping down sides occasionally. Do not overbeat or shortbread will be tough. Using your hands, mix in mini chocolate chips until evenly distributed while gathering dough into a ball.
  • Using your fingertips, pat mixture into an ungreased 8-inch square baking pan. Using the tines of a fork, poke shortbread randomly at 1-inch intervals. Sprinkle with 1 1/3 Tbsp. of sugar
  • Bake in centre of oven until sides come away from pan and shortbread appears set (about 40 minutes). Cool on a rack for 15 minutes, cut into bars while still warm.


~Tip~ For a pretty look place a doily (or cut up paper snowflakes) on the shortbread while it's still in the pan. Dust with icing sugar and carefully remove doily.
