  • Place the plums (whole, pits and all) in a large pot and bring to a boil, mashing as they heat up with a potato masher. Simmer 10 minutes until fruit is very soft. Place plums in a jelly bag and extract juice. Measure 5 cups of juice. You may add up to 1/2 cup of water to make up the difference.
  • In a large pot, place juice, lemon juice and pectin crystals. Bring to a rolling boil on high. (1 tsp. of butter added at this stage helps to prevent foaming) Add the sugar all at once and stir until dissolved. When mixture reaches a rolling, foaming boil do not stir and boil 1 full minute.
  • Pour into sterilized jars and can in a hot water bath for 5 minutes. Enjoy.
