  • Cook noodles according to directions then rinse with cool water. Let drain slightly.
  • Meanwhile, while noodles are cooking. Chop celery, carrots and onions (own preference) I use a food processor.
  • Then combine noodles and veggies in a bowl or plastic container and crumble in feta cheese. Stir everything together and add dressing to taste. Refrigerate. Separate into portions for quick lunches for work or on the go.

Notes

I add extra dressing to individual servings, as it does absorb a bit. I always make huge batches of this and take it to work for lunch or use as a side, its simple easy to make and super tasty, I can never get enough, enjoy.
