  • Cook bacon in saucepot on medium heat until crispy. Add onions and garlic and cook until softened, about 5 minutes.
  • Deglaze pan with white wine, scraping bottom to get all the "good bits". Add squash, thyme, salt and pepper. Allow everything to mix in together, until the squash starts to glisten. Add stock, and reduce heat to simmer until squash is very tender, about 25 minutes.
  • Remove from heat and process with hand blender (or pour carefully into food processer). Add evaporated milk and warm through.

Notes

We used fresh bacon from our local farmer (not smoked) which gave a more subtle flavor. Try not to over-process the soup for a more rustic (chunky) texture.
