  • Mix first 6 ingredients until blended.
  • Heat 1 Tbsp. oil in large skillet on medium-high heat. Add tofu; cook 4 to 5 min. or until golden brown on all sides, turning occasionally. Remove tofu from skillet; set aside.
  • Bring 6 cups water to boil in medium saucepan. Meanwhile, heat remaining oil in same skillet. Add peppers; cook and stir 4 to 5 min. or until crisp-tender. Add peanut butter mixture to skillet; cook 1 to 2 min. or until well blended, stirring constantly. Return tofu to skillet; cook and stir 1 to 2 min. or until heated through. Remove from heat.
  • Discard Seasoning Packet from soup mix package. Add Noodles to pan of boiling water; cook 1 min. Drain noodles; Add to ingredients in skillet; mix lightly. Top with green onions and mint.

Special Extra

Garnish with additional fresh mint leaves. Serve with lemon wedges.

For a Thinner Sauce

If you prefer a thinner sauce, reserve 1/4 cup water from the hot drained cooked noodles. Gradually stir enough of the reserved water into the sauce until of desired consistency.
