Made from soybeans, tofu is well known for its ability to absorb new flavours through spices and marinades. And as a bonus, it's high in both protein and calcium. Look for tofu in the produce section of your grocery store.
If you prefer a thinner sauce, reserve 1/4 cup water from the hot drained cooked noodles. Gradually stir enough of the reserved water into the sauce until of desired consistency.
