  • Heat oven to 400ºF.
  • Mix cream cheese, dressing and lemon zest until blended.
  • Spoon 1/4 of the quinoa onto centre of each of 4 large sheets heavy-duty foil sprayed with cooking spray. Turn up sides of foil. Slowly pour 1/3 cup broth over quinoa on each foil sheet; top with beans and fish.
  • Spread cream cheese mixture onto fish; top with tomatoes. Fold foil to make 4 packets; place in single layer on baking sheet.
  • Bake 15 min. Let stand 5 min. or until fish flakes easily with fork and all the broth is absorbed. Cut slits in foil to release steam before carefully opening packets.


Prepare using 25%-less-sodium chicken broth.
