  • Heat oven to 350ºF.
  • Stir flour, baking powder, cinnamon, salt and 1/2 cup sugar in large bowl with whisk until blended. Whisk eggs, milk and oil in medium bowl until blended; stir in apples. Add to dry ingredients; stir just until blended. Combine peanut butter, oats and remaining sugar until crumbly.
  • Spoon half the batter evenly into 12 muffin pan cups lined with extra-large or giant paper liners, filling each liner half full; top each with 1 Tbsp. streusel mixture. Cover with remaining batter and streusel mixture; press streusel lightly into batter with back of spoon.
  • Bake 20 to 25 min. or until toothpick inserted in centres comes out clean. Cool in pan 5 min. Remove to wire rack; cool completely.


For added flavour and texture, substitute 1/2 cup Sugar in the Raw Turbinado Style Golden Sugar for the brown sugar used to make the streusel topping.

    I was anxious to try these muffins as I love peanut butter, but they were a total waste of ingredients!! The muffin was tasteless, and the topping was ok, but not tasty enough to make up for the rest of the muffin!! I hope no one else wastes any ingredients on this recipe!!

    I doubled the recipe and used russett apples. I followed all the instructions exactly. Don't overmix, and make sure you always use fresh ingredients. These received rave reviews from family, including kids, and my greatful coworkers! The measurements are exact, I didn't have a drop left. Excellent recipe in my opinion.
