Perfect for breakfast or on-the-go snacks, these apple muffins are sure to please. Peanut Butter is used in place of butter in the crisp and crumbly streusel topping - a tasty twist on tradition.

  • Heat oven to 350ºF.
  • Stir flour, baking powder, cinnamon, salt and 1/2 cup sugar in large bowl with whisk until blended. Whisk eggs, milk and oil in medium bowl until blended; stir in apples. Add to dry ingredients; stir just until blended. Combine peanut butter, oats and remaining sugar until crumbly.
  • Spoon half the batter evenly into 12 muffin pan cups lined with extra-large or giant paper liners, filling each liner half full; top each with 1 Tbsp. streusel mixture. Cover with remaining batter and streusel mixture; press streusel lightly into batter with back of spoon.
  • Bake 20 to 25 min. or until toothpick inserted in centres comes out clean. Cool in pan 5 min. Remove to wire rack; cool completely.


For added flavour and texture, substitute 1/2 cup Sugar in the Raw Turbinado Style Golden Sugar for the brown sugar used to make the streusel topping.
