  • Heat oven to 400ºF.
  • Pulse 2-1/2 cups flour, cheese and 3/4 cup butter in food processer until mixture resembles coarse crumbs. With processor running, slowly add cold water to processor until dough comes together. Shape dough into 2 balls; flatten into disks. Wrap tightly with plastic wrap. Refrigerate 1 hour.
  • Toss apples, sugar, lemon juice, remaining flour and spices in large bowl. Set aside.
  • Roll out each dough ball into a 13-inch circle. Place one into a 9-inch pie plate, trim to fit pan. Fill pie crust with fruit mixture. Cut remaining butter into small pieces and add to fruit mixture. Roll out remaining dough in the same fashion and place over pie plate. Seal and flute edges. Place on baking sheet. Bake 45 to 50 min. or until golden brown.

Special Extra

Roll out extra dough scraps and cut with leaf-shaped cookie cutters. Use a wet pastry brush to adhere leaves to top of pie.
