  • Heat oil in large nonstick skillet on medium heat. Add yellow onions and peppers; cook 5 min., stirring frequently. Stir in curry paste and thyme. Remove vegetable mixture from skillet; cover to keep warm.
  • Add chicken to skillet; cook 5 min. or until chicken is evenly browned, stirring frequently. Return vegetable mixture to skillet. Add apple juice, vinegar and garlic; cook 2 min., stirring constantly to scrape browned bits from bottom of skillet.
  • Add apricots, ketchup and coconut milk; mix well. Simmer on medium-low heat 5 min. or until chicken is done and ingredients are heated through, stirring occasionally. Sprinkle with green onions.

Substitute

For a more economical version, prepare using boneless skinless chicken thighs.

Note

Prepare using mild, medium or hot curry paste. Or, you can substitute curry powder for the curry paste.
