  • Heat oven to 375°F.
  • Whisk corn starch, garlic and vinaigrette until blended. Cook onions and bacon in large ovenproof skillet on medium heat 5 min. or until bacon is crisp around the edges, stirring occasionally.
  • Add tomatoes and pepper; cook 5 to 7 min. or until tomatoes are softened, stirring occasionally. Add corn starch mixture to skillet; cook 2 min. or until thickened, stirring constantly. Remove from heat.
  • Combine flour, cornmeal, baking powder, baking soda and salt in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Add buttermilk, parsley and Parmesan; stir just until blended. Drop into 6 mounds over ingredients in skillet.
  • Bake 30 to 35 min. or until topping is golden brown. Cool slightly.

Serving Suggestion

Serve with steamed rapini.
