  • Heat oven to 375°F.
  • Heat oil in large ovenproof skillet on medium-high heat. Add onions, yellow peppers and garlic; cook 7 min. or until tender, stirring frequently. Spoon into large bowl.
  • Remove skillet from heat. Add canned tomatoes, oregano and 1/4 tsp. black pepper; mix well. Set aside for later use.
  • Add ground beef, ground pork, bread crumbs, ketchup, parsley, eggs, Worcestershire sauce and remaining black pepper to cooked vegetable mixture in bowl; mix just until blended.
  • Shape meat mixture into 9x5-inch loaf on work surface. Arrange bacon over top and sides of meatloaf, with slices overlapping as necessary to completely cover meatloaf. Place over cooked tomato mixture in skillet.
  • Bake 1 hour. Add fresh tomatoes to skillet. Increase oven temperature to 400°F. Bake meatloaf an additional 25 min. or until bacon is crisp and meatloaf is done (160°F) Remove from oven. Let stand 10 min. Top with olives before serving.

Storage Know-How

Use ground beef within 2 days of purchasing, or freeze for longer storage. To thaw ground beef, place on the bottom shelf of the refrigerator on a plate to catch any juices. Once thawed, cook within 1 to 2 days. To thaw more quickly, use your microwave's DEFROST function or seal the meat in a resealable plastic bag and submerge in cold water, changing water every 30 min. until thawed. Meat thawed in the microwave or using water should be cooked immediately.

Serve with fresh bread or your favourite hot cooked pasta.
