  • Heat oven to 400ºF.
  • Place wire rack on rimmed baking sheet; spray with cooking spray. Place flour in pie plate or shallow dish. Beat eggs in separate pie plate. Combine Parmesan and bread crumbs in third pie plate.
  • Dip chicken, 1 breast at a time, in flour, then eggs, then Parmesan mixture, turning to evenly coat both sides of each breast with each ingredient. Place on prepared rack. Lightly press crumb mixture into chicken breasts to secure.
  • Bake 15 to 20 min. or until chicken is done (165ºF). Top with pasta sauce and mozzarella; bake 5 min. or until sauce is heated through and mozzarella is melted. Sprinkle with parsley.

Serving Suggestion

Serve with hot cooked spaghetti.
