  • COOK carrots until tender; drain. Puree carrots with eggs and milk until smooth. Stir in 1 cup (250 mL) cheese, 3/4 cup (175 mL) of the cracker crumbs, salt, pepper and nutmeg.
  • SPOON into a greased 1 qt (1L) casserole dish. Sprinkle with remaining cheese, breadcrumbs and parsley. Bake at 350°F (180°C) for 30 minutes.
