  • BEAT egg slightly in small bowl. In another small bowl mix bread crumbs and parmesan cheese.
  • DIP eggplant slices into beaten egg, then into crumb mixture, coating well.
  • PLACE in an oven-proof casserole dish. Top with tomato sauce and mozzarella.
  • BAKE at 400°F (200°C) for 15 to 20 minutes or until eggplant is tender, and cheese has melted.
  • PLACE a cheese-topped slice of eggplant on each bun. Spoon some sauce over each bun and sprinkle with additional parmesan cheese, if desired.
