  • Heat oven to 400ºF.
  • Brush cut sides of squash with 2 Tbsp. oil; place, cut sides down, on baking sheet sprayed with cooking spray.
  • Bake 30 to 35 min. or until tender. Cool 10 min. Use fork to scrape squash flesh into spaghetti-like strands.
  • Heat remaining oil in large skillet on medium heat. Add onions; cook and stir 3 to 5 min. or until softened. Stir in sweet peppers and garlic; cook and stir 5 to 7 min. or until crisp-tender. Add squash, shredded cheese, black pepper and 2 Tbsp. Parmesan; mix lightly. Cook 2 to 3 min. or until shredded cheese is melted, stirring frequently.
  • Spoon into 9-inch square baking dish sprayed with cooking spray; sprinkle with remaining Parmesan.
  • Bake 25 to 30 min. or until heated through. Remove from oven.
  • Heat broiler. Broil casserole, 4 inches from heat, 2 to 3 min. or until top is lightly browned.

How to Cook the Spaghetti Squash in the Microwave

Place squash halves, cut sides down, in microwaveable dish. Add enough water to dish to fill to 1-inch depth. Microwave on HIGH 12 min. or until squash can easily be pierced with fork.

Variation

Substitute 8 (250-mL) ramekins sprayed with cooking spray for the 9-inch square baking dish. Place on rimmed baking sheet. Bake 15 to 20 min. or until heated through. Remove from oven. Heat broiler. Broil casseroles, 4 inches from heat, 2 to 3 min. or until tops are lightly browned.

Special Extra

Garnish with cherry tomatoes before serving.
