Prepare using chopped toasted pecans.
Pour combined liquid ingredients into combined dry ingredients; stir just until dry ingredients are moistened. (Batter will be lumpy.) Do not stir until the batter is smooth. Overmixing can result in tough or rubbery breads or muffins.
Pour the batter into a greased and floured loaf pan, or greased or paper-lined muffin cups. Bake as directed.
Prepare as directed, substituting 4 oz. (1/2 of 225-g pkg.) Baker's Semi Sweet Chocolate, chopped, for the nuts.
