  • Heat oven to 350ºF.
  • Mix first 5 ingredients in large bowl; stir 1/2 cup nuts. Whisk remaining ingredients in separate bowl until blended. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)
  • Spoon into 12 muffin pan cups sprayed with cooking spray; top with remaining nuts.
  • Bake 25 to 30 min. or until toothpick inserted in centres comes out clean. Cool 5 min. before removing from pan to serve.


Prepare using chopped toasted pecans.

How to Prepare Quick Bread and Muffin Batter

Pour combined liquid ingredients into combined dry ingredients; stir just until dry ingredients are moistened. (Batter will be lumpy.) Do not stir until the batter is smooth. Overmixing can result in tough or rubbery breads or muffins. Pour the batter into a greased and floured loaf pan, or greased or paper-lined muffin cups. Bake as directed.

Banana-Chocolate Chunk Muffins

Prepare as directed, substituting 4 oz. (1/2 of 225-g pkg.) Baker's Semi Sweet Chocolate, chopped, for the nuts.
