Need a simple trick to add some zip to grilled lamb chops? Add chopped fresh mint to our balsamic vinaigrette dressing, then use it as both a marinade and grilling sauce. After one taste, you won't want go back to eating plain grilled lamb again.

  • Mix dressing and mint until blended. Pour 3/4 of the dressing mixture over lamb chops in shallow dish; turn to evenly coat both sides of each chop with dressing mixture.
  • Refrigerate 3 hours to marinate. Meanwhile, refrigerate remaining dressing mixture until ready to use.
  • Heat barbecue on high heat. Remove lamb chops from marinade; discard marinade.
  • Grill chops 8 to 10 min. or until done (160°F), turning chops and brushing with remaining dressing mixture after 5 min.

Serving Suggestion

Serve with hot mashed sweet potatoes, and grilled or steamed fresh asparagus spears.
